The Ryback Kitchen Knives have been a great success and the response from users has been fantastic. I am currently making grips for the last of the initial run of knives.

I will be doing a new run of Rybacks after the current knives are sold out, however first price quotes on steel indicate the new knives will be at least 30% more expensive than current prices.

My goal in designing the Ryback Kitchen Knives was to produce a general purpose knife that would be comfortable in the hand with a practical blade shape and that could stand up to daily use without constant resharpening.
The steel I decided upon is called Becut from Bestar Steel in Remscheid, Germany. Becut is a patented stainless alloy developed for machine knives in the food processing industry. This is a tough, fine grained stainless steel approved for food processing applications under German law. Becut is substantially tougher than normal cutlery stainless it's also a lot more difficult to grind and work.
All Ryback blades are vacuum heat treated and triple tempered to HRC58-59 with an industrial deep cooling cycle for maximum performance.
The Ryback Kitchen knives are the only knives I do not personally hand grind in my workshop. The machinery needed to properly grind kitchen cutlery and keep the price within reason weighs around 12,000 kilos and would be financially impossible for a small shop like mine.
So I turned to one of Solingen's best traditional manufacturers of fine kitchen cutlery who agreed to grind my blades. I personally brought the heat treated blanks to Solingen and was present for the several days needed to individually grind each one to the desired 0.3mm - 0.4mm edge thickness before sharpening.
The grips are individually made, fitted and the knives are hand finished by me in my workshop in Berlin. Once completed each knife is personally sharpened and tested.
In response to requests, I developed a special version of the Ryback with Hostaform plastic grips which are better suited to the beating knives take in restaurant kitchens.
