A good knife should be used. Unfortunately, it's often kitchen knives which see the most use and receive the least consideration.

My kitchen cutlery combines functional design, rational manufacturing technology and old fashioned handwork to create affordable knives of the highest quality for daily enjoyment. It helps that I'm passionate about cooking and that my brother in law has more than 30 years experience training professional cooks. His input and advice are invaluable.

Ryback Evolution: Series Two

In designing a successor to the Ryback Series One I kept all of the positive aspects of the original Ryback, listened to feedback from my customers and created the Ryback Series Two. It's lighter and faster than the Series One and I've improved the grip to fit the largest of hands and accommodate a wider variety of cutting styles.

Most Western cooks prefer a Chef's knife with a blade length between 150mm and 200mm, a comfortable grip and a blade wide enough to keep the hand clear of the cutting board. The blade should also have enough belly to keep the tip on the board while cutting in a rocking motion as various ingredients are feed under the moving edge.

Satisfying these requirements, I added a flat grind taken down to around 0.3mm (0.0118") before sharpening. This ensures effortless cutting with enough lateral stability to prevent chipping. To top it off, I selected German Becut stainless steel – developed and patented for use in the mechanical knives found in automated food processing machinery – to bring you one of the finest all purpose kitchen knives in the world: The Ryback Series Two.

The RybackGP: A Versatile Companion

The Series Two is a big knife. For some tasks a shorter, narrower blade is advantageous and the RybackGP (for General Purpose) fits the bill perfectly. The RybackGP has a 100mm blade and an overall length of 225mm. The GP weighs approximately 130 grams depending on the grip materials.

The RybackGP and the Ryback Series Two share the same 3.2mm Becut stainless steel and can be purchased with matching grips. Be warned: If you buy a RybackGP and you'll soon want a Series Two - and vice versa!

The RybackGP is also the perfect all around utility knife for camping, trekking and general outdoor use. Combine the RybackGP with the sheath of your choice and take to the hills.

The RybackGP is almost sold out. I only have a few knives left. I plan on doing a second run of these knives, however it will take some time to make that happen. If you want a RybackGP, now's the time to order.

Rational Production Strategy

From the beginning, I wanted to make the best kitchen knives possible. And since the thin, flat blade grind ideal for kitchen cutlery is impractical to realize with hand grinding, I decided to have my blanks machine ground in Solingen, Germany. The truth is, hand ground blades would only be ten times more expensive, they wouldn't cut one cent better.


Mytuko Series Knives

The Mytuko Mini is crossover design for kitchen use and as an Everyday Carry knife (EDC), particularly in areas where carrying one-hand opening folders is restricted.

The classic Santoku is practical for a wide variety of cutting chores in the kitchen and beyond. So I did not venture far from Santoku tradition for the basic shape of the Mytuko Series blades.

When it came to the grip, I retained the Santoku proportions while totally reinterpreting both form and construction. All Mytukos feature full-tang construction with grips securely bolted in place.

Mytuko Mini FG (Flat Grind)
Features a machine flat ground blade made from 1.4116, Solingen's Classic stainless cutlery steel.

Mytuko Mini HG (Hollow Grind)
These knives feature a hand hollow grind and are offered in very limited quantities from made from different steel alloys, including Damascus. Prices start at €180 for mono steel and €280 for Damascus. Click the small pics below, right for details on current stock.

Mytuko Medium: A Bigger Brother

The next knife in the Series is the Mytuko Medium. The 100mm blade of the Mytuko Medium is 40mm wide and looks huge compared to the Mytuko Mini. Certainly the Mytuko Medium is up to any kitchen chore you'd tackle.

The first few, hand-ground Mytuko Mediums are made from A2 (1.2363) carbon tool steel. These knives are all hollow ground by hand see below, right for pics and details!

Mytuko Sheaths

The Rowe Leather sheaths for the Mytuko Mini are hand made in the USA and hold the knife securely while allowing for an easy draw and replacement thanks to the swiveling snap keeper. The series of pics below illustrate how the sheath works.

The Mytuko Medium

Mytuko Medium, Hand Ground from A2 Carbon Tool Steel

100mm Blade, overall 225mm and hand hollow ground from 4.4mm A2 carbon tool steel (1.2363).

Both knives have dark Olive Green Micarta grips (looks almost black in the pics, but it is dark olive in reality). Steel flats are satin finished and acid washed for a fine, grey patina while the grind satin bright for contrast. Blades are ground to a thin edge before sharpening.
